My son makes his own Ginger Beer. While its not quite the same, it's cool in sort of the same way, and delicious as well. He has tweaked the recipe and brewing process and now has a sort of signature version. Very gingery and spicy with the cloves and anise, with a hint of lime. The process is similar with the cooking and culturing, just shorter due to the nonalcoholic fermentation being way less.
I brew my own and love it. It makes you appreciate what goes in to making a good beer.

I've been brewing since before legal ~15 years ago. Started off simple. Now; growing my own hops, culturing yeast strains specific to the beer I'm brewing, etc. etc. I've resisted kegging my own beer only in the interest of self-preservation. Have fun with it!
