That was AWESOME! PASSION all the way!
It is cool... His production series is available at Sur la Table stores... And are NICE. Played with some a few weeks ago... But still think if I were springing for more kitchen cutlery I'd go with the Ken Onion Shuns... I love those...
Shuns are good and pretty reliable - I've spent too much on knives in the past, no more. Damascus chef's knife forged by Hattori was over $1,200.00 - at the end of the day they're gorgeous and do the job but one drop, bone hit and tink...they're broken or picked up by someone who wants it more than you.
Bending points don't really help if you cut into a bone accidentally. I've done it and paid the price.
Most of the hitters like Wustopf etc. loose their edge pretty quick so sharpening them constantly is time comsuming and wears the blade fairly quick.
Good stuff!
I have a few Shuns, nothing very expensive. Nice slicers; the edges are incredibly thin.
that was cool. thx.
