Here’s a fast lobster (conch is even better!) salsa. Chop up (as the Brits say “finely slice”) cilantro, tomato, onion and add to a bowl. Add lobster or conch strips, lime juice and mix – I use one lime per person. Add pepper and some sea salt to taste. Dish up with nachos. The perfect refreshing afternoon snack after a day’s fishing.
